Job Summary
The Commis I is responsible for preparing all food items, based on standardized recipes, for the Restaurants, Room Service, Employee Cafeteria and Banquets, while maintaining the highest standards to produce an appealing and appetizing product. He/she is also responsible for ensuring the cleanliness, sanitation and safety in the kitchen and work areas while minimizing waste and maximizing cost/production ratio.
KEY RESPONSIBILITIES
Managing Food Preparation
Prepare and display buffet food items according to the hotel standards.
Proficiency in the following cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.
Recognize quality standards in fresh vegetables, fish, and dairy and meat products.
Knowledge of herbs and spices and proper use of each.
Managing Food cost, Portion control and Food Hygiene practices
Maintain clean and sanitary environment with knowledge of proper handling, storage, etc.
Prepare food for Banquets, ad required, following specifications on Banquet Event Orders.
Prepare and service food for the Staff Cafeteria as specified by the Chef or Kitchen Supervisor.
Prepare all foods following hotel standard recipes. Preparation of specials will be under the direction of the Chef or Kitchen Supervisor.
Clear buffets and kitchen line, storing food and equipment properly at the end of the shift.
Work banquet food station as scheduled by the Chef or Kitchen Supervisor.
Know the location and operation of all fire extinguishing equipment.
Additional Responsibilities
Practice safe work habits always to avoid possible injury to self or other employees.
Use Production Charts as specified by hotel’s standards.
Be able to support any position in the Kitchen that needs help.
Follow all Health Department and regulations in regards to food and storage standards and safety.
Be able to operate and maintain cleanliness of all kitchen equipment.
Maintain a “Clean as You Go” policy.
Assist in storage and rotation of food items according to hotel procedures.
Sign keys out and back in under supervision as needed.
EXPERIENCE, CERTIFICATION & EDUCATION
2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years’ experience in the culinary, food and beverage, similar position or related professional area.
Proficient with local rules and regulations involving, Health & Safety & HACCP.
Ability to stay calm when the pressure mounts.
Ability to work independently and as a member of a team with minimal supervision.
Any other reasonable duties as directed by the Executive Chef / Sous Chef / Chef De Partie.

Job Summary
The EAM will provide leadership for all the day to day operation of the hotel in respect to standards, revenues and cost control with the aim of achieving optimum financial returns for the /owners, whilst ensuring highest levels of associate and guest satisfaction.

Management Requirements
- Knows the business and keeps abreast of competition, present and future trends, new products, practices and systems, and legislation impacting the hotel industry. Consults direct reports on operations needs and opportunities. Identifies and communicates potential new revenue opportunities to hotel department heads influencing the development of plans to tap those opportunities.
- Manages multiple departments to continually drive total hotel revenue, maximise profitability, and improve team members and guest engagement while supporting Wyndham Green initiatives and Wyndham’s expansion by developing Talent Pipeline
- Actively participate in the community involvement projects and initiatives together with the hotel’s management team
- Ensure that the operational departments work effectively as one team to provide a seamless service across the operation. Institute a clear communication strategy within the hotel and supporting teams to ensure effective sharing and updating of information throughout the property, including a structured and active meetings and briefings process. Seeking opportunities to encourage teamwork in order to share resources and best practice between departments
- To ensure that standards of service are maintained across the entire operation, through the use of the LRA, Standards and Procedures and a commitment to both on and off job training
- To work closely with all HOD’s to ensure the Hotel is in full compliance with licensing regulations, Health and Safety policies, Food Hygiene regulations and other local policy and procedures. Ensuring health, safety, hygiene and other relevant legislative obligations are fulfilled; ensuring the safety and wellbeing of the hotel, guests and associates
- To work with the HOD, General Manager, DOSM and PR/Advertising Agencies to develop new business opportunities and to continually work on improving existing operations to ensure they exceed both our guests and owners expectations
General Requirements
- Work closely with the Sales team to assist in closing Group/Event business through participation in Site Inspections, manipulating pricing and offering to fit budgets presented by the Sales/Catering teams.
- Take an active role in the preparation of the Marketing Plan, Operation Plan and related Action Plans.
- Conducting frequent and thorough inspections of the hotel operations to ensure service excellence is consistently maintained
- Deputising generally in the absence of the General Manager when required
- Together with the HOD’s, take a leading role in positively representing the with guests, reinforcing a customer focused approach to hotel operations at all times – and harnessing WynReview data is a tool to measure success
- Establish positive contacts within the hotel and Wyndham’s internal organization to ensure best use of ’s skills, services and professional knowledge. Identify opportunities for resources and facilities to be shared between the properties and implement best practice.

Education & Experience
- Experience in a hotel is preferred.

Job Summary
The Engineering Supervisor is responsible for the day-to-day operations of the Engineering Department. In the absence of the Director and/or Assistant, the Supervisor will assume the administrative, financial and operating aspects of the hotel for the Engineering department.
Education & Experience
